Long Jing (Dragon Well) is one of the most famous and probably most expensive green teas in China. It is harvested in spring and hand-roasted in small batches in a wok – a technique that shapes the leaves into sword blades. The infusion has a fresh green color, notes of roasted chestnuts, green beans, and a bittersweet finish.
