Roots like chicory, dandelion, astragalus are known in naturopathy for their Qi-strengthening and liver-tonifying properties. Reishi and Maitake mushrooms are considered extremely valuable medicinal plants in Chinese medicine.

Also goes well with plant milk... perhaps more with oat and rice milk. If sweeten... with rice syrup from Werz or Arche. Rice syrup is a traditional sweetener from Japan, fructose-free, with notes of caramel.

Preparation

CASUAL

• 5 tsp Maitake Chai
• 500ml plant milk
• 500ml water
• 3-4 tsp whole cane sugar
• Bring the mixture to a slow boil
• Steep for 5 minutes
