Yellow Tea

Yellow tea is made from young, often still silvery-haired buds and leaves, which are only allowed to wither and dry after harvesting – without rolling and without targeted oxidation. This preserves its particularly mild, floral, and slightly honey-sweet taste.

Yellow tea undergoes an additional, traditional processing step: the slightly dried leaves are "sealed" in cloths or paper and allowed to slowly ripen in them (men huan). This process breaks down bitter substances and gives the tea its typical golden-yellow cup and a soft, rounded aroma – today, yellow tea is only produced in very small quantities.
