White and Yellow Tea
White tea is not heat-fixed and therefore retains all its valuable natural ingredients. Due to the young leaves, white tea contains fewer bitter catechins and is therefore gentler on the stomach.
Since the tea remains raw, i.e., unfixed, the aroma changes over time, so stored white teas often resemble very floral black teas.
Like green tea, yellow tea is heat-fixed, but more gently and for a shorter period. This is followed by controlled ripening at high humidity, which gives the tea its characteristic taste, and finally drying.
