Pu Erh Tea

Pu-erh tea is a special style of processing from the Yunnan province in southern China. It is named after the city of Pu'er, which is still an important center for tea processing today.

Harvested tea leaves, often from old, wild-growing tea trees, are partially heat-fixed, then pressed into various shapes and stored. Through proper storage and aging, a round, soft flavor develops after years, which is highly prized by connoisseurs. "Raw" Pu-erh is an aged white/green tea, which is clearly noticeable in its aroma and liquor color. Depending on the aging technique, the tea is colonized by various microorganisms, which slowly change the taste and effect of the tea over time.

Since the aging process is very time-consuming, there is a second process for Pu-erh, in which the tea is ripened under controlled conditions with high humidity and temperature. This can shorten the aging period to 2 months.
