"Cooked" (Shou) Pu Er undergoes an accelerated fermentation process in which the leaves are stacked and fermented under controlled humidity and heat.

Within just a few months, a dark, earthy character is developed, which with traditionally aged (Sheng) Pu Er is only achieved after years.
